I made these crispy potato stacks almost 10 years ago on my youtube channel, and they have aged better than ever. I was inspired by a combo of @dominiqueansel’s cronut and a classic mille feuille. Potatoes are my favorite food group apparently. 😆  Ingredients: Yukon gold potatoes  Avocado oil for frying  Fry at 275f for 4-5 minutes, let them rest for 1 hour in the fridge, then at 325f for another 3-4 minutes.  Salt to taste  Ketchup is a must

When fish skin isn’t your thing, this technique comes through on the texture you’re looking for. Sourdough encrusted salmon, white bean and corn succotash, finished with a fresh harissa dressing. 🔥  @chefdanbarber might like this one…I’ve heard he’s not the biggest fish skin fan.  It’s got all the things you need for a cozy fish recipe and can be easily adjusted to any season. Enjoy. Ingredients: 5-6oz salmon filet, skinless.  Sourdough bread, sliced thin 2 tbsp mayo 1 tsp dried thyme 1 tsp lemon zest  Salt  White bean succotash: 3 tbsp chopped yellow onion 1 garlic clove, chopped  1/2 cup white beans 1/2 cup corn 1/2 cup white wine  3 tbsp butter  1 tbsp lemon juice  2 tbsp chopped parsley  1 tbsp chopped chives  Salt & pepper  Harissa dressing: 3 tbsp harissa paste (spicy style) 3 tbsp olive oil 1 tbsp lemon juice  1 tbsp chopped parsley  1 tbsp chopped chives  Salt
